A cut from the upper shoulder near the fifth rib, making the quantity of these steaks less available than other cuts. Because of its close proximity to the Ribeye, it can be substituted, in most cases, at a cheaper price. This steak cooks great over high heats just like other prime cuts. All of our Wellsdale Farm beef is pasture-raised and finished with grains from Highland Brewery without added hormones or antibiotics.
