  1. 1 Whole Joyce Farms Poulet Rouge
  2. 2oz Lean Times Poultry Seasoning

Produce, Oil, Butter, Herbs & Spices

  1. 1 Stick melted Butter (unsalted)
  2. 4 Red Potatoes
  3. 6 Brussel Sprouts
  4. 4 Carrots
  5. 1 Pint of your favorite Asheville Brewed Beer

Using shears, cut the spine out of the Poulet Rouge.

After the spine is removed, cut through the breast plate, split the chicken and season heavily with the Lean Times Meat Co. Poultry Seasoning.

Put vegetables in the bottom of your dutch oven. Lay the hen on top of the vegetables and roast for about three hours at 325 degrees.

Throughout the cooking process, deglaze with your favorite beer.

Cook for 2 1/2 to 3 Hours
